- ⅓ cup honey or maple syrup
- ½ teaspoon vanilla extract
- ¼ cup mini chocolate chips
- 1 tablespoon chia seeds or flaxseeds (optional)
Instructions
- In a mixing bowl, combine oats, peanut butter, honey, and vanilla extract. Stir until well mixed.
- Fold in mini chocolate chips and chia seeds or flaxseeds (if using).
- Scoop out tablespoon-sized portions and roll into balls.
- Place on a parchment-lined tray and refrigerate for at least 20 minutes to firm up.
- Store in an airtight container in the fridge for up to a week.
