Ingredients

Scale

For the Cupcake Batter:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup whole milk
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • Neon gel food coloring (pink, blue, green, purple)

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Neon gel food coloring (pink, blue, green, purple)

For the Glow Effect:

  • ¼ cup tonic water (for UV-reactive glow)
  • Edible shimmer dust
  • Star-shaped sprinkles

Instructions

  • Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • Prepare the cupcake batter, divide it into bowls, and color each portion with neon gel food coloring.
  • Layer the different colors into the cupcake liners and swirl with a toothpick.
  • Bake for 18-20 minutes, then cool completely.
  • Make the frosting by beating butter, powdered sugar, and cream until smooth.
  • Color the frosting in neon shades and pipe onto the cupcakes.
  • Add shimmer dust, sprinkles, and lightly brush tonic water for a UV-reactive glow.
  • Serve under black light for a glowing galaxy effect!

Notes

  • Use gel food coloring for the best neon effect—liquid food coloring may alter the batter consistency.
  • Tonic water is the key ingredient for the glowing effect under black light.
  • For an extra glow, mix tonic water into a light frosting glaze and brush over the cupcakes before serving.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • For a gluten-free version, substitute with a 1:1 gluten-free flour blend.
