- 1 lb boneless, skinless chicken breast, diced
- 1/2 lb smoked sausage (andouille or kielbasa), sliced
- 1 tablespoon Cajun seasoning (plus more to taste)
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 (10 oz) can Rotel (diced tomatoes with green chilies)
- 1 1/2 cups chicken broth
- 1 cup long grain white rice (uncooked)
- 1/2 cup heavy cream
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
- Salt and pepper, to taste
- Fresh parsley or green onions (optional garnish)
Instructions
- Heat oil, cook diced chicken and sausage with Cajun seasoning until browned.
- Add onion, bell pepper, and garlic; sauté.
- Stir in Rotel, broth, rice, and seasonings; bring to a boil.
- Cover and simmer until rice is tender.
- Stir in cream and cheeses; melt and mix.
- Garnish and serve warm.
