Description

This Loaded Cajun Chicken & Sausage Cheesy Rice Bake is a spicy, creamy, and cheesy one-pot comfort meal packed with bold Southern flavors.


Ingredients

  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breast, diced
  • 1/2 lb smoked sausage (andouille or kielbasa), sliced
  • 1 tablespoon Cajun seasoning (plus more to taste)
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)
  • 1 1/2 cups chicken broth
  • 1 cup long grain white rice (uncooked)
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • Salt and pepper, to taste
  • Fresh parsley or green onions (optional garnish)

Instructions

  • Heat oil, cook diced chicken and sausage with Cajun seasoning until browned.
  • Add onion, bell pepper, and garlic; sauté.
  • Stir in Rotel, broth, rice, and seasonings; bring to a boil.
  • Cover and simmer until rice is tender.
  • Stir in cream and cheeses; melt and mix.
  • Garnish and serve warm.

  • Use andouille sausage for authentic Cajun flavor.
  • Adjust Cajun seasoning to your heat preference.
