Ingredients
2 cups graham cracker crumbs
½ cup melted butter
¼ cup granulated sugar
24 oz cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
½ cup sour cream
¼ cup heavy cream
2 tsp cotton candy extract
Pink and blue gel food coloring
Instructions
Preheat the oven to 325°F.
Mix the graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan and bake for 8-10 minutes.
Beat cream cheese and sugar, then add vanilla and cotton candy extract. Mix in eggs, sour cream, and heavy cream.
Divide the batter and add food coloring. Alternate spooning both batters into the crust and swirl.
Bake for 50-60 minutes, let cool, then refrigerate for at least 4 hours.
Top with whipped cream and cotton candy before serving.
Notes
Make sure to allow the cheesecake to cool gradually to prevent cracks.
You can adjust the food coloring for different effects, such as using purple or teal.
For a no-bake version, replace eggs with gelatin and chill instead of baking.
