Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic (minced)
  • ½ cup chicken broth
  • ¼ cup white wine (optional)
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp Italian seasoning
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tbsp butter

Instructions

  • Cook rice with garlic and broth, adding cream and Parmesan at the end.

  • Sauté chicken in olive oil, then set aside.

  • Prepare sauce by sautéing garlic, adding broth, lemon juice, and zest, and simmering.

  • Combine chicken with the sauce, simmer, and garnish with parsley.

  • Serve chicken on top of garlic Parmesan rice.

Notes

  • You can substitute white wine with more chicken broth for a non-alcoholic version.
  • To make the dish spicier, add more red pepper flakes or cayenne pepper.
